Ingredients:
1. 1big bunch spinach (blanched and finely chopped)
2. 1 cup bengal gram flour
3. 1/2 teaspoon chat masala
4. 1 teaspoon sugar (optional)
5. A Pinch of turmeric powder
6. 1 teaspoon green chili paste
7. Salt to taste
For Filling
1. 1/4 cup boiled sweet corns (coarsely crushed)
2. 1/2 cup grated mozzarella or any processed cheese
3. 1/2 tsp black pepper powder
4. 1 tablespoon chopped coriander
5. 1/2 teaspoon lemon juice
6. Salt to taste
7. Butter or oil for shallow fry
Method:
1. Stem or boil spinach with less water, squeeze all water and dry the spinach.
2. Combine the spinach, chat masala, turmeric powder, chili paste, sugar and salt mix well.
3. Divide the spinach mixture into equal portions and keep aside.
4. Combine the corn, cheese, pepper, lime juice, coriander, salt and mix well.
5. Divide the filling into equal portions and keep aside.
6. Place a portion of the spinach mixture and spread a little, add the filling in between and seal the tikki by bringing the edges together at the centre.
7. Roll the tikkis on the bengal gram and coat them evenly from all the sides.
8. Shallow fry the tikkis till they turn golden brown from all the sides.
9. Serve with sauce or chutney.
Tips: In this tikki you can fill any of your favorite filling like green peas, sprout potato or paneer it's give variation.
